Ube is the Filipino word for purple yam. It contains pigments that gives its violet color. In the Philippines, ube is cooked with sugar and eaten as a sweetened dessert or jam called ube halaya which is a bright violet color. Ube is also an ingredient in the fruity dessert halo halo, another popular Filipino dessert.
This Ube Yema Cake is so soft and fluffy, ube yema frosting is so rich and creamy that it taste like ube halaya. Please enjoy this recipe.

Here's what you'll need:
4 egg yolks
1/3 cup granulated white sugar
1/4 cup oil
1/4 cup ube halaya
1 tsp vanilla
1/3 cup fresh milk or evap milk
1 cup all purpose flour
1& 1/2 tsp baking powder
1/2 tsp salt

4 egg whites
1/2 tsp vinegar or cream of tartar or lemon juice
1/3 cup granulated white sugar

Ube Yema/ Halaya No-Drip Frosting:
